1.21 doesn't exist

🗣️ Describe the bug

While not necessarily a bug, there isn't really an appropriate option for this.

In the latest build of AJ 1.8, Minecraft version 1.21 was removed, along with many other versions that weren't required since an older version worked fine. Unfortunately, this isn't the case with 1.21, as 1.20.5 doesn't work with it.

1.21 should preferably come back, considering 1.20.5 is still being maintained.
